I posted my standard chop almost 2 years ago and it was totally paleo. This one is not paleo but still very healthy and really delicious! I use 2 different lettuces which I think is a nice touch and more nutritious than only romaine. I made it last week for a few friends and it was a great recipe to feed a group. Best part I had the chicken from my crock pot recipe and did the bacon the night before. So I had a VERY easy time day of the dinner. I served with the roasted potatoes from last week and it was perfect!
Ingredients for salad (this was a huge platter that fed 5 with leftovers)
- 1 clamshell of mixed greens
- 3 heads of romaine chopped in strips
- 1 container mozzarella balls
- 8 strips bacon cooked and chopped
- 1 container cherry tomato halved
- 2 avocado diced
- 3 chicken breasts shredded
- 1 can garbanzo beans
- 1/4 box of pasta rings cooked
Ingredients for dressing
- 3/4 cup of olive oil
- 1/4 cup red wine vinegar
- 1 teaspoon of mustard
- 1 clove of garlic
- a pinch of sugar
- salt and pepper to taste

I would recommend anyone to take a look at this. I feel it’s just a steal. It really is one of the best paleo recipe books we’ve come across!
