Chicken Enchiladas

We were very lucky to have my mom visiting last week so I decided to make one of her recipes using the rest of my shredded chicken.   These enchiladas are a comfort food we grew up with and the best part they are SO EASY!!!!  Oh and you don't really have to measure anything.  Its one of those recipes that you can just dump in a bowl and it always tastes amazing.   They are also great for a big group because you can make ahead and then just pop in oven for 20 mins.  I did a horrible job of getting a good pic of these all garnished and ready to eat because everyone was rushing to eat.

Ingredients

  • 5 chicken breasts shredded 
  • 1 bag of mexican shredded cheese
  • 1 can green chiles
  • 1 large container of sour cream 
  • 1 small container sour cream
  • 1 can green enchilada sauce 
  • 12 flour tortillas 
  •  option to garnish w avocado, green onion, tomato, salsa 

Directions
  • dump chicken, whole bag of cheese, can of chiles, and large sour cream in bowl and mix
  • spoon mixture into tortilla and place in baking pan
  • bake on 350 for 20 -25 mins.  watch to make sure tops are brown
  • mix small sour cream and enchilada sauce to pour on top
  • garnish
