I'm obsessed with this side dish! These potatoes are so full of flavor after soaking all day in the rosemary & garlic marinade. Also I love that they are little disc in different colors. My Whole Foods sells bags that are a mix of russet, red, and purple potatoes. I served this last week with an AMAZING roast chicken and I am doing them again tonight with a salad for a small girls dinner. Best thing of all you prep these in the morning and then just toss on the cookie sheet when you are ready to eat dinner! Oh and they are a hit with adults and kids alike. I busted Pete and Hank eating them cold this morning during breakfast... is that isn't a good sign I don't know what is!
Ingredients
- I used 2 bags of tri colored two bite potatoes (any small potato would be great)
- 3 tablespoons olive oil
- 1 tablespoon dried rosemary
- 1 tablespoon salt
- 1/2 tablespoon pepper
- 6 cloves of garlic
Directions
- cut the potatoes into little discs and dump into a mixing bowl
- add the rest of ingredients and mix well. I use my hands to really spread everything evenly
- put in the fridge to soak. I have left them from as long as 7 hours to as short as 3 so dont get too worried about the time
- pre heat oven to 400
- put on cookie tray lined w foil (makes it way less messy)
- spread into a layer and cook
- my oven they take almost a full 50 mins.
