Basic Slow Cooker Chicken

This recipe is not very glamorous but it is essential to so many recipes that I thought I should post it.  Last week I made a big batch of it to use for a chicken chopped salad and enchiladas.   I will share both those recipes this week.  I made this chicken again yesterday so I could have some protein to add to my Sunday night salad.  The chicken is so great to have on hand for little ones.  I mix it into Hanks mac n cheese or toss in a quesadilla for a quick and tasty lunch.   Basically it is your go to chicken you can add to any and every recipe!

Ingredients

  • 6 boneless skinless chicken breasts
  • 1.5 cups of chicken broth
  • 1 small yellow onion
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 2 tablespoons fresh thyme 
  • 1 tablespoon fresh parsley
  • 6 cloves of garlic peeled
  • salt & pepper
Directions
  • Chop all your veggies
  • place chicken in slow cooker
  • add all other ingredients and cook on low
  • after 6 hours it will shred with a fork
