Quinoa Chili & Some Exciting News!

I hope none of you made the mistake I did this morning trying to run outside.  Hank now has a runny nose and I am freezing despite a hot shower.  This quinoa recipe is the perfect thing to warm up!  Not to mention I LOVE doing a big meal on Monday so we can enjoy leftovers all week.  This chili is so hearty and full of protein with quinoa and three types of beans you wont miss the meat for a minute!

Ingredients

  1. 2.5 cups quinoa cooked
  2. 2 cans of diced tomatoes 
  3. 1 can tomato paste
  4. 1 poblano pepper
  5. 1 yellow bell pepper (you can use any color) 
  6. 1 can kidney beans 
  7. 1 can black beans
  8. 1 can white northern beans
  9. 1  yellow onion diced
  10. 4 cloves garlic 
  11. 1 can of green chilis 
  12. 2 limes juiced
  13. 2 tablespoons chili powder
  14. 1 tablespoon cumin 
  15. 1/2 tablespoon paprika
  16. 1/2 teaspoon coriander 
  17. 1 cup water
  18. 2 tablespoons olive oil
  19. salt and pepper to taste 
  20. avocado to garnish 
Directions
  1. Cook the quinoa and set aside
  2. heat the olive oil in pot and add the diced onion until it gets translucent 
  3. add the cans of diced tomato, beans, all diced veggies, quinoa, and spices (basically everything!) 
  4. stir and add the water if its too thick 
  5. let simmer on low until ready to serve!
