PLP Chopped Taco Salad

No secret I LOVE a great chopped salad so I am pumped to post this recipe.  There was a taco salad all over Pinterest this week but it had sugar & ketchup in the dressing so I decided to create my own version.  This salad is an absolute winner.   Pete and I LOVED it and went back for seconds.   Its perfect for an entree or you could use it as a side at a party.  You could also omit the turkey for a great vegetarian dish.   Best part of the salad its SO EASY.   If you have a few mins to brown 3/4 pound ground turkey you can easily make this.   Plus the meat is cold so you could even make this ahead like I did and then just grab from fridge for dinner.  Also for those with little ones you may want to buy extra turkey for them.  Hank loved his dinner or turkey and avocado while we enjoyed the salad.

The dressing is a variation of the go to red wine vinaigrette I make almost 5 nights a week.   I think this dressing works on almost any and every salad its so basic.  I always have people emailing asking what kind of dressing we use so I will post the dressing as a separate recipe.   You can always change it up by using balsamic instead of red wine vinegar or adding a teaspoon of Dijon mustard for some kick.



Ingredients For Salad

  1. 3/4 pound ground turkey browned with cumin, paprika, salt and pepper
  2. 2 heads romaine chopped finely into strips
  3. 1/2 clamshell of mixed greens
  4. cherry tomatoes halved
  5. 2 avocados diced
  6. 1/2 can black beans 
  7. 1 cup corn ( I used frozen bi color)
  8. 1 cup white cheddar 
  9. 1/4 a red onion diced
  10. tortilla chips to garnish 
Directions
  1. brown the turkey and set aside to cool
  2. dice the romaine
  3. cut the tomatoes, onion and avocado
  4. mix all ingredients listed in above section toss with dressing and serve
Ingredients for Dressing
  1. 1/2 cup EVOO
  2. 1/4 cup Red Wine Vinegar 
  3. 1 clove garlic (grate it in)
  4. salt & pepper 
Directions
  1. I pour liquid right into a pyrex so I can kind of measure and then grate in garlic
  2. season with s&p 
  3. whisk with fork

Pile on the ingredients to your bed of both lettuces 

Once turkey is cool add it
