Slow Cooker Short Rib Recipe!!

I should have posted this in the morning because it would be a PERFECT Sunday night dinner.  This recipe is so EASY and so delicious that I cant think of anything it wouldn't be perfect for.  I make it almost once a week and even did a huge batch of it for our Superbowl Party.   Short rib sounds fancy and $ but I buy it at Costco.  Usually one package is about 2.5 pounds ($15) and will last us several meals.   You can make tacos or if you are gluten free just throw some avocado slices with fresh lime on the top.  Best part you just mix a few spices and toss them on the meat in your slow cooker and wait for an AMAZING dinner with no work or mess!  Enjoy!

Ingredients

  1. 2.5 pounds beef short rib
  2. 1 teaspoon salt
  3. 1 teaspoon pepper
  4. 1/2 teaspoon paprika
  5. 1/2 teaspoon cumin
  6. 1/2 teaspoon onion powder
  7. 1/2 teaspoon garlic powder
  8. 1/4 teaspoon chili powder
  9. a beer ( I use whatever Mexican beer I have in the basement but I think anything works)
  10. green cabbage diced
  11. limes
  12. avocado
  13. queso fresco 
  14. optional tortillas 
Directions
  1. Mix all the spices listed above in a bowl
  2. sear the meat on all sides in a bit of olive oil 
  3. put the meat in slow cooker, dump spices, dump beer and put on low for 8 hours
  4. after 8 hours take a fork and shred the meat 
Sear the short rib

Mix spices

Add with beer in slow cooker

put on low for 8 hrs
