Mac n Cheese with Bacon & Peas

I am SERIOUSLY obsessed with this recipe!!!!  Those of you who know me well are probably in shock because I am not a mac n cheese person at all.  I don't eat orange cheese so usual mac n cheese recipes gross me out.  This is a lighter take on a comfort food made with greek yogurt! (no milk or cream)  It doesnt taste heavy at all.  The peas and the bacon add the perfect crunch and taste to a creamy dish.  Best part is the whole family can enjoy this.   Hank was in heaven and I served it with a salad for Pete and I.   Please make this tonight!

*Obviously this recipe is very far from paleo

Ingredients

  1. 8 oz penne pasta
  2. 1 bag frozen peas
  3. 6 slices of bacon (cooked and chopped)
  4. 1 7oz container of fage greek yogurt (I use the green)
  5. 4 oz cheddar shredded 
  6. 4 oz provolone shredded 
  7. salt and pepper to taste 
Directions
  1. Boil salted water for pasta
  2. Cook bacon slices in oven until crispy
  3. when pasta is 1 min from finished add frozen peas
  4. drain the pasta and peas saving 2 cups of pasta water (this is important) 
  5. add the pasta pea mix back to pot on low heat
  6. dump in the greek yogurt, cheeses, and pasta water.  Add slowly to avoid clumps
  7. I then put a serving in a tupperware for Hank 
  8. add bacon for the adults
  9. salt and pepper to taste 
bacon goes in oven to crisp up while pasta water boils


save the pasta water!! 

add frozen peas for last minute of cooking 

drain 

add the greek yogurt 

mix in the cheddar slowly

mix in the provolone 

YUM!!
