Sausage & Kale Stuffed Sweet Potato

Hi everyone!   This recipe is so great it inspired me to stop being lazy and actually write a post!  I saw a version of this on Pinterest.   Pete and Hank both LOVE sweet potatoes and sausage so this was so perfect.   Best of all it is so easy, inexpensive,  and healthy.  Not to mention makes great leftovers which is key around here.

Ingredients

  1. 1 pound Italian sausage
  2. 1 can great white northern beans
  3. 10 leaved of dino kale cleaned and torn to bite size pieces
  4. 1 shallot diced
  5. 1 cup Parmesan cheese
  6. 3 gloves garlic
  7. 1/2 teaspoon dried basil
  8. 1/2 teaspoon dried oregano
  9. salt and pepper to taste
Directions
  1. Heat oven to 400 and place potatoes on cookie sheet lined w foil to bake (my oven they take a full hour)
  2. While your taters are baking saute the sausage in a pan over medium heat and then drain the fat
  3. add the beans, kale, cheese, and spices to the mixture over low heat
  4. after taters are cool enough to handle scoop the insides out (I save them in a Tupperware for Hank)
  5. stuff the sausage/ kale mix into the potatoes
  6. When you are ready to serve put them back on cookie sheet and warm in the oven
Bake on 400 for one hour
