Shrimp & Quinoa Superfood Salad

This salad is my new OBSESSION!  It is so fresh and flavorful I cant stop eating it.  We are averaging twice a week so I thought I should share the recipe.  Perfect light dinner for these nights before Thanksgiving!  

Ingredients for Salad

  • 1 pound peeled & deveined shrimp
  • 1 package seafood herbs (those plastic containers of herbs hanging in produce section)
  • Olive Oil
  • Salt & Pepper
  • Paprika
  • 1 cup cooked quinoa 
  • 1 cup pomegranate seeds 
  • 1/2  frozen corn
  • 1 avocado diced
  • 1 can black beans drained and rinsed 
  • 1/4 red onion chopped
Dressing
  • 2 lemons juiced (about 1/4 cup lemon juice)
  • 1/2 cup Olive Oil
  • 2 cloves garlic
  • salt & pepper
  • a squirt of honey
Directions

  • Start by putting shrimp in a ziploc bag with Olive Oil, herbs, salt & pepper & paprika to marinate 
  • Cook 1 cup quinoa set aside to cool
  • chop onion, avocado 
  • mix ingredients for dressing
  • add everything to quinoa
  • grill shrimp on grill pan
  • top salad with shrimp
