Ingredients for Salad
- 1 pound peeled & deveined shrimp
- 1 package seafood herbs (those plastic containers of herbs hanging in produce section)
- Olive Oil
- Salt & Pepper
- Paprika
- 1 cup cooked quinoa
- 1 cup pomegranate seeds
- 1/2 frozen corn
- 1 avocado diced
- 1 can black beans drained and rinsed
- 1/4 red onion chopped
Dressing
- 2 lemons juiced (about 1/4 cup lemon juice)
- 1/2 cup Olive Oil
- 2 cloves garlic
- salt & pepper
- a squirt of honey
Directions
- Start by putting shrimp in a ziploc bag with Olive Oil, herbs, salt & pepper & paprika to marinate
- Cook 1 cup quinoa set aside to cool
- chop onion, avocado
- mix ingredients for dressing
- add everything to quinoa
- grill shrimp on grill pan
- top salad with shrimp
