After being gone last weekend I couldn't wait to spend an entire weekend with my boys. So Friday I planned a picnic in the park with a tasty spread for Pete. I pinned a recipe for BBQ chicken quinoa salad so I decided to make that my way and serve with an easy caprese on the side. The BBQ chicken salad was AWESOME!!!!!! We both loved it and couldn't stop eating it. This will be a new standard recipe for us. The flavors reminded me of the CPK salad I used to love that has about 1 million calories. This recipe takes no time to make, travels well, and makes delicious leftovers! A must try!
Ingredients
- 2 cups cooked quinoa
- 2 bone in skin on chicken breasts cooked
- green onion diced
- 1 avocado diced
- 3 tablespoons BBQ sauce
- 2 limes juiced
- 1 can black beans
- 1/2 cup corn
Directions
- cook quinoa
- cook chicken
- dice all veggies
- mix together
- add the lime juice and BBQ sauce and mix in like a salad dressing
