Shaved Brussels Sprout Salad!!!

You need to make this TODAY!!!  This salad is tied with the kale for my favorite dish!  My mom has made this before and gave me the recipe.   The flavor profile is so perfect this could be a restaurant dish.  I LOVE the texture of the shaved sprouts and the saltiness of the bacon and cheese.  YUM.  The dressing has orange and lemon and its perfection.  I served it with a new meatball recipe that I will share tomorrow.  It was amazing.   You need a lot of sprouts and shredding them by hand like my mom does would take forever so I used my mini food processor.  I think you could def do them in the vitamix and it would be even faster!   I promise this recipe will not disappoint!

Ingredients

  • 2 bags of Brussels sprouts ( I get them at whole foods where they sell them by the bag)  if your store doesn't do them that way I would say buy 4 dozen. 
  • 1 package of bacon cooked and chopped
  • 1 cup of chopped walnuts
  • 1 cup shredded Parmesan cheese
  • 1/2 red onion diced finely
  • 2 cloves garlic
  • juice of 1 lemon
  • juice of 1 orange
  • 1/2 cup olive oil
  • salt and pepper
Directions
  • Clean the sprouts first and then shred them
  • cook bacon and chop in fine
  • mix the sprouts with bacon, cheese, and chopped walnuts
  • juice the lemon and orange in a separate bowl
  • whisk in the EVOO
  • mix in the red onion and garlic
  • add salt and pepper
  • top the salad with the dressing
