The Miami Salad

When I call this the Miami Salad I am obviously referring to Miami University the best place in the world not Miami, FL!  It is back to school time and I am feeling nostalgia for my days in Oxford.  My choices were start slamming Natty Light and chain smoking or make my favorite salad from college with a paleo twist.  I thought the second option was probably smarter.  The original salad was on a bed of mashed potatoes so I substituted the cauliflower mash instead and it worked perfectly!!!  Also I took a shortcut and bought a pineapple salsa from Whole Foods so I didn't have to make a salsa.  This dish is so light and refreshing perfect for these last days of summer!!!!!

Ingredients for 2 salads

  • Spinach 
  • cauliflower mash recipe
  • 2 pieces of Salmon
  • 2 roma tomatoes
  • store bought salsa ( you could use whatever kind you like but I think mango or pineapple are best)
  • EVOO,  Salt, pepper, dill, and parsley for roasting salmon
Directions 
  • make the mash first since it is the most time consuming part recipe
  • make a bed of the spinach leaves and place tomato slices on top 
  • preheat oven to 425
  • season fish with EVOO, S&P,  and herbs
  • bake for 10 mins and let rest after 
  • put mash and fish on salad
  • top with salsa generously like you would dressing!

good old cauliflower mash
