When I call this the Miami Salad I am obviously referring to Miami University the best place in the world not Miami, FL! It is back to school time and I am feeling nostalgia for my days in Oxford. My choices were start slamming Natty Light and chain smoking or make my favorite salad from college with a paleo twist. I thought the second option was probably smarter. The original salad was on a bed of mashed potatoes so I substituted the cauliflower mash instead and it worked perfectly!!! Also I took a shortcut and bought a pineapple salsa from Whole Foods so I didn't have to make a salsa. This dish is so light and refreshing perfect for these last days of summer!!!!!
Ingredients for 2 salads
- Spinach
- cauliflower mash recipe
- 2 pieces of Salmon
- 2 roma tomatoes
- store bought salsa ( you could use whatever kind you like but I think mango or pineapple are best)
- EVOO, Salt, pepper, dill, and parsley for roasting salmon
