Meatball Monday!

Meatballs are a go to meal in our house but I was getting sick of the same old spinach filled ones we always have.  These are an Asian twist on a meatball and best part is they don't even need any sauce so its an easy, fast and delicious weeknight meal!  I served them with the shredded Brussels sprouts salad but any salad would be great with this recipe.   This makes almost 30 decent sized meatballs which is great so we both have leftovers for lunch the next day!

Ingredients

  • 2 pounds ground beef
  • 1/2 sweet potato minced
  • 10 shiitake mushrooms minced
  • 1/2 red onion minced
  • 3 gloves of garlic minced 
  • 2 tablespoons fish sauce
  • 3 tablespoons tomato paste
  • 2 tablespoons minced parsley
  • 2 tablespoons olive oil
  • salt and pepper
Directions

  • Heat oven to 350
  • line baking sheets with foil (less mess to clean) 
  • mince all the veggies
  • mix everything into a bowl with meat
  • roll into balls
  • bake for 20 mins
