Salmon with fresh herbs and white wine

This recipe is so easy, takes 10 mins to cook, and looks fancy enough for a dinner party!  What's not to love.  After an amazing weekend in NYC with my best girls I was feeling a bit depleted of nutrients so I decided salmon would help get me back to health.   I remembered a Barefoot Contessa recipe I used to make years ago and modified it so it is 100% paleo.  The prep time is maybe 4 mins.  Toss the seasoned salmon in a baking dish with the juice of a fresh lemon, EVOO and 1/2 cup white wine.  Chop fresh dill and parsley and that's it!   You have a simple and amazing dinner in no time.  I served our with a side of the kale salad and sweet potato fries.  Perfect Monday night meal!

Ingredients (serves 2 with leftovers)

  • 1 1/4 pounds of salmon
  • 1 lemon
  • EVOO
  • salt & Pepper
  • fresh dill chopped
  • fresh parsley chopped
  • 1/2 cup white wine (I just grabbed a Sauv B I had open in fridge)
Directions
  • Season fish with S&P and EVOO
  • Preheat oven to 400
  • chop the herbs
  • put herbs, lemon juice and wine on fish
  • bake in oven for 10-12 mins
