Simple and Delicious Tomato & Basil Quinoa Bake

I am so excited to share this recipe!   It is so EASY and really good!!  It will most definitely become our Sunday night go to for the rest of the summer.  It is an awesome new way to combine tomato, basil and mozzarella, and the addition of quinoa makes it hearty enough for a whole meal.  I could barely wait for it to come out of the oven to eat it and LOVE that its a filling meal with no meat.  Please make this tonight!!!

Ingredients

  • 2 cups of quinoa cooked
  • 2 cups of pasta sauce
  • 2 table spoons tomato paste
  • 1 cup Parmesan cheese 
  • 2 cups mozzarella 
  • 1 container of cherry tomatoes sliced in half
  • large bunch of fresh basil ( I used about 6 leaves sliced for the inside and 6 on the top for garnish)
  • salt & pepper
  •  1/4 teaspoon of crushed red pepper 
Directions 
  • cook the quinoa
  • Preheat oven to 350
  • while that's cooking mix sauce, tomato paste, Parmesan, salt & pepper, and crushed red pepper in a pan over low heat
  • add the cooked quinoa to the sauce mixture.  Add half the basil and half the moz and 3/4 of the fresh tomatoes 
  • pour in an 8 by 8 greased baking dish
  • top with remaining cheese and fresh tomatoes and bake for 25 mins covered with foil
  • take off foil and broil cheese until brown and bubbling (in my oven that takes about 3 mins)
  • Top with remaining fresh basil and serve! 
Finished bake... how pretty is that?!
