I am so excited to share this recipe! It is so EASY and really good!! It will most definitely become our Sunday night go to for the rest of the summer. It is an awesome new way to combine tomato, basil and mozzarella, and the addition of quinoa makes it hearty enough for a whole meal. I could barely wait for it to come out of the oven to eat it and LOVE that its a filling meal with no meat. Please make this tonight!!!
Ingredients
- 2 cups of quinoa cooked
- 2 cups of pasta sauce
- 2 table spoons tomato paste
- 1 cup Parmesan cheese
- 2 cups mozzarella
- 1 container of cherry tomatoes sliced in half
- large bunch of fresh basil ( I used about 6 leaves sliced for the inside and 6 on the top for garnish)
- salt & pepper
- 1/4 teaspoon of crushed red pepper
