I am always on the hunt for great salad recipes that can be a meal. This is a GREAT one!!! I am calling it the power salad because for the lettuce I used power greens. That is a mix of organic baby kale, red & green baby chard, and baby spinach. The salad is super filling with chicken, bacon and avocado! I dressed it with my moms go-to dressing and it was the perfect dinner. I cant wait to eat it for lunch tomorrow which is always a good sign. Best part it takes virtually no time at all to make! Enjoy!
Ingredients
- one clam shell of power greens
- 1 container of cherry tomatoes
- 1 avocado
- 1/2 cup pine nuts
- 1/4 red onion
- 2 chicken breasts cooked and chopped
- bacon chopped
Dressing
- 3/4 cup olive oil
- 1/4 balsamic
- 2 gloves garlic
- 1/2 teaspoon mustard
- 1/2 teaspoon honey
- dash of salt
Directions
- cook the bacon and chicken
- while that's happening chop the veggies and add them to greens
- mix all the dressing ingredients and whisk
