PLP Power Salad

I am always on the hunt for great salad recipes that can be a meal.  This is a GREAT one!!!   I am calling it the power salad because for the lettuce I used power greens.   That is a mix of organic baby kale, red & green baby chard, and baby spinach.  The salad is super filling with chicken, bacon and avocado!  I dressed it with my moms go-to dressing and it was the perfect dinner. I cant wait to eat it for lunch tomorrow which is always a good sign.  Best part it takes virtually no time at all to make!  Enjoy!

Ingredients

  • one clam shell of power greens
  • 1 container of cherry tomatoes 
  • 1 avocado
  • 1/2 cup pine nuts
  • 1/4 red onion
  • 2 chicken breasts cooked and chopped
  • bacon chopped
Dressing
  • 3/4 cup olive oil
  • 1/4 balsamic
  • 2 gloves garlic
  • 1/2 teaspoon mustard
  • 1/2 teaspoon honey
  • dash of salt
Directions

  • cook the bacon and chicken
  • while that's happening chop the veggies and add them to greens
  • mix all the dressing ingredients and whisk
