Double Trouble.... Chicken Thighs and Kale Salad

I have two great recipes to share, these two recipes are the most delicious things we have eaten all month.   Sadly I did not come up with either recipe.   The kale salad was introduced to me by my sister in law and I CAN NOT stop making / talking about it.  Sorry in advance if this is the 1,000th time you have heard me go on about the kale salad.  I just never knew a meatless salad could be so filling and that kale could be so tasty.  I have perfected making this as quick and possible with minimal clean up since I eat it for lunch 5 days a week.   Please check out her blog for the recipe!

Ingredients 

I use a salad spinner to get beans super dry so they crisp up nicely



De ribbing the kale... that's the most annoying part for me 

I add red onion for crunch to the original recipe

These chicken thighs are from Nom Nom Paleo.  The best paleo blog on the web.   I was over chicken thighs because of the same old recipe I had been making so I found this.  Pete was OBSESSED!!!  If you haven't made chicken thighs you are in for a treat.  Since the thighs were Asian instead of doing a white rice I made my own side dish of quinoa with peas and edamame.  It was perfection!
