Orzo Lemon and Cucumber Salad

I kept seeing this recipe over and over on Pinterest and finally got around to trying it.  I had to make a few modification but I have to say it is a WINNER!   Pete tasted and proclaimed it "so fresh and delicious."  To me it tastes like summer!  I love all the fresh herbs.  It uses mint and parsley which we have so much of growing in the garden it was nice to use some.  This salad could be a main course served with a green salad as I am doing or a side dish with just about anything.  Please let me know what you think.  I will be serving it for a BBQ this weekend!  Thank you to all who sent me pics of your quinoa bakes!!!!!

Ingredients 
  • 1.5 cups cooked orzo
  • 2 tablespoons olive oil
  • 1 lemon juiced with the zest
  • 3/4 cups of feta 
  • 1/2 cucumber sliced
  • 1/4 red onion diced
  • 6 leaves of fresh mint
  • 1 tablespoon fresh parsley
  • salt to taste 
Directions
  • cook the orzo
  • drain it and cover it with the olive oil and the lemon
  • add the cucumber, onion feta and herbs
  • salt to taste and serve
