I kept seeing this recipe over and over on Pinterest and finally got around to trying it. I had to make a few modification but I have to say it is a WINNER! Pete tasted and proclaimed it "so fresh and delicious." To me it tastes like summer! I love all the fresh herbs. It uses mint and parsley which we have so much of growing in the garden it was nice to use some. This salad could be a main course served with a green salad as I am doing or a side dish with just about anything. Please let me know what you think. I will be serving it for a BBQ this weekend! Ingredients
- 1.5 cups cooked orzo
- 2 tablespoons olive oil
- 1 lemon juiced with the zest
- 3/4 cups of feta
- 1/2 cucumber sliced
- 1/4 red onion diced
- 6 leaves of fresh mint
- 1 tablespoon fresh parsley
- salt to taste
