I posted a paleolasagna recipe that I tried from Pinterest a couple months ago. It was excellent but I kept thinking there had to be an easier recipe and a better tasting one at that. So I am very excited to share my new and vastly improved recipe. I have made this about 6 times so far and its Pete's absolute favorite. For those of you who have tried my non paleo lasagna the flavor profile is exactly the same. So honestly you feel like you are eating a real lasagna dinner with no noodles, no layers of cheese, and way more veggies!! A few hints to make it easy and quick. Get the spinach defrosting right when you get home from the store. Also cut the zucchini and squash thin so it cooks faster. I honestly like this better than regular lasagna!
Ingredients
- A large zucchini and squash (if they look tiny buy two of each)
- 2 boxes frozen spinach
- 2 cans crushed tomatoes
- 1 container fage Greek yogurt
- 1 pound grass fed ground beef
- 1 pound spicy Italian sausage
- 3 cloves garlic
- a bit of Parmesan for the top (not paleo but so needed)
