These chicken fingers are SO GOOD its crazy! This is a recipe your entire family will enjoy. I was craving more chicken after the success of my slow cooked chicken on Monday so I made these and they were a HUGE HIT. I served them to Pete hot out of the oven and he couldn't stop raving about them. I made a honey mustard sauce and salad to accompany the fingers. What makes them paleo is there is no bread in the "breading" it is almond flour instead. Which is annoyingly expensive but you only need a cup so you can get a few bathes from a bag of the flour. I added garlic powder, onion powder, paprika and salt to the mix. If I were making these for young kids maybe skip the paprika.
Another key to them is making sure you put them on a baking rack so both sides crisp up nicely. These are a winner and are being added to the rotation ASAP. I think I am going to chop the leftover strips and mix into my lunch salad tomorrow. YUM!!!!!
Ingredients
- 1 pack chicken tenders ( if you have a family of 4 buy 2 packs)
- 1 cup almond flour
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
- 1/2 onion powder
- 1/2 garlic powder
- 2 eggs to make egg wash
Directions
- Preheat oven to 350
- dredge chicken through egg wash
- dredge through batter
- lay on rack over cookie sheet lined with foil
- Bake for 20- 25 mins
- broil for 3 mins at the end to get crispy
