Easy and Amazing Slow Cooker Italian Paleo Chicken

As most of you know by now I love to cook a big meal on Monday night so Pete has leftover for the week.  I am pretty tired of our standard rotation so I headed to my new cookbook aka Pinterest.  I found a paleo crock pot chicken soup.  Who wants soup in the summer.... not me so I changed the recipe a tad and came up with this amazing chicken to serve on a bed of spinach or quinoa.  I have tried it both ways and I am obsessed!!   Best part is you don't have to cook at all just toss the ingredients into a slow cooker or dutch oven and that's it.  

Ingredients 
  • 7 boneless skinless chicken breasts
  • 2 can diced tomatoes
  • 1 onion diced
  • 4 cloves of garlic minced
  • 2 cans coconut milk (shake before you open)
  • 1 can tomato paste 
  • 1 1/2 cups chicken broth
  • 1/2 jar pasta sauce
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon tried oregano
  • 1/2 teaspoon crushed red pepper
Directions
  • dice the onion and garlic
  • dump all ingredients into dutch oven put burner on  medium/low
  • check back in 4 hours and shred chicken with a fork
  • enjoy
