Zucchini Parmesan Chips

After seeing someone post these on FB for the one millionth time I decided it was time to try them in the Cecil house.  They are addicting!!!!   I'm a tad over Brussels sprouts after eating them for what seems like every meal so I think these chips could be the new replacement.  My only complaint was I didn't make nearly enough.  I did one medium size zucchini and I ate the whole tray right out of the oven standing up.  I think making three at once would be perfect.   Enjoy!  

Directions
  • Preheat oven to 400
  • slice zucchini thin
  • line them up on tray covered with foil
  • sprinkle EVOO and parmesan on top
  • bake for 5 mins and then broil on high until cheese is brown and bubbly 

Line cookie sheet with foil, slice the zucchini very thin

sprinkle with EVOO and parmesan 


Try not to eat them all while standing at the counter!!!
