Chicken Basil Hash and Detox Results

First things first... thank you to everyone who sent me pic of them eating quinoa salad!  It made me so happy!!  The detox is over so I wanted to share my results.  I did not loose the 5 pounds as promised on Pinterest which was a bit disappointing however I did loose 3.  Here is the caveat it was most definitely all water weight because I have already gained one of them back.  So in conclusion I think the cleanse makes sense if you need to shed water weight for an event or to get back on track after a vacation or binge weekend.   I'm glad I tried it and it was super easy and was a good reminder of how much water we need to be drinking on a daily basis.  I felt awesome when I was so hydrated and my workouts were much better.
Now for a new recipe!  I bought Pete an herb garden for Fathers Day and we have so many fresh herbs at our disposal now.  So I made this chicken basil hash that is also full of fresh thyme and parsley.  The is a take on a Barefoot Contessa hash I used to make all the time but modified to be healthy.  The hash would be great for breakfast, lunch or dinner.

Ingredients

  • 4 bone in skin on chicken breasts
  • 15-20 leaves of fresh basil 
  • salt and pepper
  • EVOO
  • 6 red potatoes 
  • 1 bunch green onion 
  • 1 red onion 
  • 1 red pepper 
  • garlic about 6 cloves 
  • 1 can tomato paste
  • 6 stems thyme
  • parsley for garnish
Directions
  • Get water boiling and toss in potatoes until they are soft to fork touch not cooked all the way
  • stuff chicken skin with basil the salt and pepper generously.  Drizzle EVOO on top
  • bake chicken at 350 for 40 mins or till cooked through
  • dice all veggies including your cooked potatoes and get them mixing together
  • grate in garlic and add tomato paste
  • after chicken cools enough to handle take off the bone and mix in

Boil potatoes a bit before or they dont get soft enough
