Arugula & Endive Awesomeness... the new go to salad!

I have to give credit to my mom for this salad which is has changed our world!  She taught me how to make it about a month ago and since then we have it at least twice a week.  Its lighter than my standard chopped salads so its perfect as a side with any protein or just add chicken to it and its a meal.  I had never had pomegranate seeds before and once you try them you will wonder where they have been your whole life.  They burst in your mouth and have AMAZING flavor.  Best part of the salad is it takes about 5 minutes to make.

Ingredients

  1. 1 container arugula 
  2. 1 head Belgian endive
  3. 1 granny smith apple
  4. 1 lemon
  5. 1 container pomegranate seeds
  6. 1 handful pumpkin seeds]
* My mom does blue cheese in the salad which is delicious but we are on hardcore paleo right now so I omit it. 


dressing
I mix 1 cup olive oil, 1/2 cup apple cider vinegar and a drop of honey

Directions
  1. dump arugula into salad bowl
  2. slice endive and apple and sprinkle with the fresh lemon juice
  3. add both the seeds and serve!

Arugula 

Slice the endive and apple

squeeze lemon juice

dump in bowl

toss and serve
