Paleolasagna

I have seen SO many of these recipes floating around the web and to be honest I have been very skeptical.  How can lasagna the ultimate comfort food be good without pasta or ricotta?!  I was having a major urge to fall off the paleo train and eat something bad so I decided to give this a try in hopes that it could satisfy my craving.  Shockingly it worked!!! Confession the fact that I havent had a bite of dairy in 6 weeks may have made a difference.  However Pete said it was one of the best things I have ever made paleo or not.  Judging from the amount he ate for dinner and packed for lunch today I believe him.

I read a ton of recipes and then devised my own plan from there.  Some call for turkey.  I used 1.5 pounds grass fed beef and 1/2 pound Italian sausage.  It was heavy on the meat so if you aren't a meat lover use less.  Also this is not dairy free.  Instead of all the ricotta and mozzarella you use in a normal lasagna this calls for 2 cups Greek yogurt and raw goat cheese.  I did not know if raw goat cheese was different than regular so I asked the cheese guy at Whole Foods.  Apparently raw goat cheese is unpasteurized and healthier because it contains all the probiotics that would normally be killed in the pasteurization process.  FYI they only sell one kind and it very pricey.  So you can use regular if you wish.

Ingredients

  • 2 zucchini sliced
  • 2 squash sliced
  • 1 head of broccoli diced
  • 1 yellow onion
  • 2 cloves garlic
  • salt & pepper
  • 1/2 pound Italian sausage
  • 1 pound ground beef
  • 1/2 teaspoon of basil, oregano, and thyme
  • 1 teaspoon crushed red pepper flakes
  • 1 can diced tomatoes
  • 1 can tomato paste
  • 2 cups greek yogurt 
  • 3/4 cup raw goat cheese 
Directions 
  1. Saute the onion a bit of olive oil.  Add the meats and brown.  
  2. drain the fat
  3. add all the spices and tomato paste, diced tomatoes
  4. In a separate bowl mix broccoli, yogurt, and goat cheese (save some goat cheese for top)
  5. layer the veggies on bottom of dish
  6. add the meat mixture
  7. add the broccoli mixture
  8. continue to layer until ingredients are finished
  9. top with the extra cheese
  10. bake on 375 for 45 mins
