Sausage Spaghetti Squash That will Please any Critic!!!!!

As you know I LOVE spaghetti squash!!  It is a great substitute for pasta and you can make a big batch of it that lasts for days.  When I lived alone I would make one on Monday and eat it for the entire week.  So I was pretty bummed when Pete admitted he really doesn't care for the dish and every time we have it he is still starving after.   It is very low in calories I think about 40 calories per cup.  So I set out on a mission to make Pete like one of my favorite dishes.  I was inspired by my moms spaghetti sauce.  She puts pieces of seared Italian sausage in the sauce and it really makes it.  I thought that could be the perfect addition to the squash making it more filling and adding more flavor.  I was right!!  Pete declared it the best meal of the week last week.  He was eating the sauce with his hands right off the stove so I knew it was a hit.  This recipe is so easy and delicious you would be crazy not to try it!  I'm excited to have spaghetti squash back in rotation at the Cecils!!!

The sausage I used was spicy Italian  
Cut them in 2 inch pieces

brown in a little olive oil

onion and garlic for the sauce

cut the squash in half

add the onion and garlic


add the tomatoes once the sausage is mostly cooked

spices: oregano, crushed red pepper, salt, and pepper 
squash ready to go in oven

after 50 mins in 350 oven 
toss the seeds and scoop out

just like noodles!
