New Fish Recipe... Prosciutto Wrapped Perfection!

I'm always searching for new fish recipes and this one is a WINNER!   I would say its a must try because of not only how delicious but how incredibly simple it is.  The inspiration came while watching Barefoot Contessa recreate a recipe she had at Spago but hers was much more complicated and involved a rosemary butter sauce that didn't sound all that healthy.  I made mine Paleo and it was fabulous.  I used tilapia because it was on sale but you can use any white fish you would like.  Just lightly oil the fish on both sides, salt and pepper it, and wrap with two slices of prosciutto on each piece.  Place in a 350 degree oven for 15 mins and serve.  The saltiness of the meat flavors the usually plain fish and just melts in your mouth!!  I served mine with roasted brussels sprouts and it was a meal Pete and I both LOVED.
