PLP's Best Asian Recipe yet: Fresh Chicken Stir Fry!

Day 2 of getting back on track was a huge success!  I made a chicken stir fry that involved close to no chopping!   I have done some Asian meals on the blog before but this one is my hands down favorite.  It tastes really fresh and healthy but is also very tasty.  Instead of doing the rice which is not paleo I served the stir fry with the cauliflower mash which was a perfect combo.  I used 7 chicken breasts because Pete likes lots of meat but you could use 4 or 5 and it would still be perfect.   I bought all my veggies bagged and pre-washed or off the Whole Foods salad bar which saved me a ton of time.

Ingredients

  • Chicken breasts chopped in uniform small pieces
  • 1/2 a bag of shredded carrots
  • cole slaw mix 
  • chopped colored bell peppers
  • chopped broccoli 
  • olive oil
  • 1 tablespoon ground ginger
  • 5 cloves of garlic
  • 1/2 teaspoon crushed red pepper
  • 1/2 teaspoon cumin
Directions
  • Cover skillet with 2 tablespoons of olive oil and get very hot
  • add the chicken and cook through and then remove and set aside
  • cook veggies until they get a tad soft and then add the chicken back in
  • Grate all the garlic into the mix and then add rest of spices
  • serve on a bed of cauliflower mash

Chop the chicken in similar sized pieces so it cooks at the same time

cook in hot olive oil

boil the cauliflower in 3 cups stock 

puree until smooth 

remove the chicken and add veggies


put chicken back in with garlic and spices
