I have a relatively new phobia of tomato sauce in a jar. Don't get me wrong in a pinch you can find a decent one and it can be a life saver. But I have read the label of every single one at Whole Foods and Lunds and there are only 2 of 20 plus brands that have zero sugar added. Once you start making it yourself you just crave the fresh taste. It is REALLY easy to make!!
Basic Tomato Sauce
- 2 Large Cans of Whole Tomatoes
- 5 cloves of garlic cut into very thin slices
- 2 tablespoons olive oil
- 1/2 red onion diced
- 1 teaspoon crushed red pepper
- 1/2 teaspoon fennel seed crushed
- 1/2 teaspoon dried oregano
- s&p
- fresh basil chopped
Start by heating the olive oil in the bottom of the pan and add the onions until soft. Pour in the cans of tomato. Add the garlic and all the spices and simmer for at least 30 mins on low. I wait and put the fresh basil in at the end so it smells lovely.
