Amazeballs Meatballs: Getting Creative with a Classic

This recipe was inspired by my favorite person ever.... Dr. Oz!!!  Pete wanted something that would reheat and still be awesome during his overnight work shift.  I remembered seeing Turkey Meatballs with pine nuts and raisins on TV and thinking they looked good but a tad weird.  I went for it and they were AMAZEBALLS!!!  Oz once again comes through and makes my love grow stronger.   I had to make a ton of changes to his recipe to make them paleo and it was so worth it.   The pine nuts give them crunch and the raisins sweetness.   Please don't be scared and make these ASAP.  When I first stared making paleo meatballs I was nervous that minus breadcrumbs they wouldn't stick together but the veggie paste makes them stick perfectly and keeps them very moist.   I made my own tomato sauce but you could use a jar if you find one with no sugar.   I will post my sauce recipe later I thought I had already posted it and so I didn't take enough pictures when I was making this.   I have to say I always thought people that make sauce from scratch are super annoying but after getting in the habit I could not imagine going back to a jar.  I crave the fresh taste!  This recipe makes almost 24 meatballs so its a great one to make and bring for lunch all week long!  Happy Monday from PLP!

Turkey Meatballs with Pine nuts and Raisins

  1. 2 pounds ground turkey
  2. 1/2 cup carrots
  3. 2 stalks celery
  4. 1 onion
  5. 3 cloves garlic
  6. 1 egg
  7. 1/2 cup pine nuts toasted
  8. 1/2 raisins
  9. fresh basil
  10. salt & pepper
Preheat oven to 425 degrees.   Make a paste in your food processor with the carrot, celery, and onion.
In a large mixing bowl add the meat, veggie paste, garlic, egg, pine nuts, raisins, basil, and salt and pepper.  Mix well with your hands and form into balls.  Place on cookie sheet and bake for 20 mins.  Add to the sauce and simmer!
