Everyone who knows me is laughing at this post. I have loved and will always love sloppy joes! They were my Monday night dinner for years when I lived in Chicago. I made them paleo and served them on a bed of cauliflower mash instead of the bun. They are so easy and quick and just make you feel good. A comfort food gone paleo. I did 2 pounds of beef so we have leftovers for lunch tomorrow but if you just do one pound use only one can of tomatoes. I have also added some before pics of the house because we are starting to do the major demo tomorrow. All new floors, crown molding, entertainment center, etc!!!! Ill keep you posted on our progress!
Ingredients
- 2 pounds of grass fed ground beef
- 2 cans organic diced tomatoes
- 1 green pepper
- 1 yellow onion
- 4 cloves garlic
- 2 tablespoons cumin
- 1 table spoon chili powder
Brown the meat and drain all the fat. Mix in the veggies and spices. Let simmer a few minutes and then add the tomatoes. EASY!!!!
