My Mexican Casserole

So its been FOREVER since we had a new recipe on PLP but everyone is requesting this Mexican casserole.  By everyone I mean my mom and friend.   There are a TON of these type of casserole recipes on Pinterest but a lot of them are complicated and require you to make a complicated sauce.   This recipe requires you to buy a jar of sauce at the store which saves time, mess, and stress.  Basically if you can cook and shred 4 chicken breasts this can be your dinner tonight.  Trust me its GOOD!!!

Ingredients

  • 4 chicken breasts cooked and shredded
  • 1 bag white corn tortilla chips 
  • 1 jar of red enchilada sauce (I used Rick Bayless Frontera brand bc it wasn't spicy and I wanted Hank to like this recipe) 
  • 1 bag Monterrey jack cheese
  • 8 oz cotija cheese (the good white mexican cheese) 
  • green onion 
  • cherry tomato
  • salsa for dipping 
Directions
  • take casserole dish and make a layer of tortilla chips
  • layer half the cooked chicken
  • pour half the sauce
  • pour half the cheese
  • repeat for a second layer
  • bake on 350 covered with foil for 25 mins and then brown top for 5 min or until cheese is bubbling
  • garnish w tomato and green onion
