Cheddar Salad

Cheddar salad is probably a strange name but that's what we call it!   I thought I didn't like cheddar until I started making this and now it is in the rotation at least 3 nights a week around here.  I usually use walnuts or cashews but you can pass on the nuts if you need to.  I think the key is a good cheddar.  I buy a white New Zealand cheddar from Whole Foods and its awesome.

Ingredients

  • Mixed greens
  • 1/2 pound of cheddar cubed small 
  • 6 slices of bacon cooked and chopped small
  • 2 honey crisp apples cubed
  • 1/2 red onion 
  • 1 cup walnut pieces
Dressing
  • 1 1/2 cups olive oil
  • juice of 1 lemon
  • 1 tablespoon honey
  • 1 clove garlic
  • salt and pepper to taste
