Kale Caesar Salad

You know I LOVE a good kale salad!  This could be my new go to one.   I also LOVE Caesar salad but don't eat it often because its so unhealthy.  This solves that dilemma the kale is obviously WAY more nutritious than romaine and its a lightened up dressing made with Greek yogurt instead of egg.   I got the recipe from Shape magazine but had to modify the dressing quite a bit.  I will be having this for lunch everyday this week.  It would also be an amazing dinner with a piece of grilled fish!  Enjoy!

Ingredients

  • 2 bunches of dino kale washed, de ribbed, and chopped into strips
  • 1/4 cup Parmesan 
  • 1/4 cup croutons 
  • 1 lemon juiced
  • 1/4 cup Greek yogurt 
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 2 garlic cloves grated in
  • 3 tablespoons olive oil
  • salt and pepper
Directions
  • Prep the lettuce by washing, de ribbing and chopping (this is the only annoying step)
  • throw it all in a bowl
  • whisk the dressing and mix
