Feasting on Filet!

Confession I was completely intimated to cook steak until last night!!   I always thought of it as something I have to order at a restaurant or have Pete cook on the grill.  Not to mention I hate overcooked steak.... rare or medium rare only for this girl please!  I started to do some research online and came across Barefoot Contessa's Steakhouse Steak recipe.   It was not paleo containing some pretty bad ingredients like vegetable oil, butter, and a cheese sauce.  I decided I could strip it down to the bare bones and try it.  The results were fantastic!! First season your steaks with salt and pepper.  Then get a cast iron skillet really hot and sear the meat on all sides.  About 2 mins a side is what worked for me.   Put them into a 400 degree oven in the same skillet for about 4 mins on each side for medium rare and that's it!   I didn't put any oil in the skillet which made it kind of tough to flip the meat so I would suggest doing that.  While  the steaks were cooking I cooked up some shitake mushrooms to top the meat with.  I served with our standard salad and the leftover cauliflower mash and it was the perfect dinner!   I will be cooking steak all summer now!!!!   Off to St. Louis for a fun filled wedding weekend.  I hope you all have a wonderful Cinco de Mayo and Derby Day!!!!! 

Season your meat well with salt and pepper 

Get a cast iron skillet HOT

Sear on all sides

Throw in oven for 8 mins
