Chopped Salad & Perfect Brussel Sprouts

We had an amazing trip to STL for a friends wedding but definitely ate and drank WAY too much!   I wanted a simple tasty dinner tonight so we could start the week right.   I also needed something big so Pete could have leftovers to pack for lunch.   I decided on a huge chopped salad and sprouts.   I was talking to my girlfriend this weekend who was saying she needed and easy recipe for sprouts so I wanted to post mine because it is so easy and delicious.  All I do is chop the stems off and half the sprouts.  Then they are mixed in a bowl with olive oil, salt and pepper.  Bake on 400 for 30-35 mins.  I like them crispy so make sure they are brown on the edges.  I always make more than we need and then put them in Tupperware containers to snack on all week.  They are addicting!  Before my wedding I would eat them everyday for snacks.

Chopped Salad
Ingredients

  1. Romaine
  2. Avocado
  3. tomatoes
  4. green onion
  5. bacon
  6. chicken
I poach the chicken in no sodium chicken broth and then dice it in cubes.  Bake the bacon on 400 for 25 mins so its crispy.  Chop veggies and add to romaine.  I cut the lettuce into little tiny strips.  




3 weeks till Baby Fusz!   So glad we could see her in STL! 

My mom told me about this Bacon.... Run dont walk to Whole Foods for it!
