Sweet potatoes should be eaten as a post workout fuel for paleo eaters. We like it as a recovery meal. They are different from regular potatoes because they don't contain substances that are harmful to your stomach like lectins and saponins. They contain vitamin A, vitamin B6, C and many other important vitamins for our bodies. I like them because they also contain magnesium a mineral I need in my diet as well as many Americans that are deficient. Sweet potatoes have a relatively high glycemic index so again if you are looking to loose weight use sparingly or post workout!
Ingredients (this makes a LARGE amount so scale accordingly)
1. 2 pounds grass fed ground beef
2. 1 pound hot Italian sausage
3. 3 sweet potatoes
4. 1 red bell pepper
5. 1 yellow bell pepper
6. 2 red onions
7. 1 poblano pepper
8. 3 jalapeno peppers
9. 3 cloves garlic
10. 3 tablespoons cumin
11. 1 tablespoon ground chipolte chili pepper
12. hot sauce to taste
Start by browning all the meat in a LARGE skillet. (use the biggest one you have)
Remove meat from skillet and cook veggies in the leftover fat.
Once the veggies have been in about 7 mins add the sweet potatoes.
Then return the meat to the skillet and add all the spices and the hot sauce.
Let it cook 20 mins of so just to make sure everything blends together nicely.
Pete adds a fried egg to top his. I just eat mine with a mixed green salad!
It even makes a great brunch dish. We brought it to a friends Easter Brunch and it got rave reviews and is a ton healthier than your standard brunch fare!
