Detoxing with Heirloom Tomato Tilapia

I had a fantastic trip to South Beach for my friend Christine's Bachelorette Party!  Despite waking up to terrible weather on Saturday we managed to entertain ourselves all day exploring the local bar scene.  Needless to say I came home in need of some healthy food to get my energy back!  I decided to do an easy oven baked tilapia with a quick tomato sauce.  It was light, healthy, and refreshing!!  I served with my usual salad.   Just what you need after a weekend of chugging beers. ;)

Baked Tilapia
1. Pre-heat oven to 350
2. cover the tilapia with 2 fresh lemons, a pinch of salt and pepper
2. bake for 18 mins or till the fish flakes of nicely

Heirloom Tomato Sauce
1. Roast tomatoes for 30 mins in a 400 degree oven ( I like the tomatoes to bubble and get caramelized)
2. mix tomatoes with chopped basil, 2 cloves of garlic, 2 tablespoons of balsamic vinegar 
3.  Spread on cooked fish and Enjoy!!
