Pete has been asking for shrimp non stop lately and honesty I have been ignoring him because I never know how to make it really tasty and not bland or chewy. Lets just say I solved all those problems last night!! This recipe is one I will make weekly because it takes zero time/ effort and is packed with flavor. I used chipolte chili powder which was a tad spicy so if you are not in the mood for heat I would use 1 tablespoon instead. Also I grated the garlic in Rachel Ray style so it could infuse the olive oil. I knew this was a winner when Pete asked if we could have it again for dinner tonight!! Is it wrong that I may agree to that?!
1. Buy 24 (this was the perfect amount for 2 people) shrimp shelled and deveined
2. Make marinade by combining 3/4 cup of olive oil, 2 tablespoons chipolte chili powder, 3 tablespoons fresh thyme chopped, 6 gloves of garlic grated, and a pinch of salt and pepper.
3. Throw shrimp and marinade together in a Tupperware for 30 mins to 2 hours
4. Grill and Enjoy!
