No more excuses... salad in seconds!

 I am getting emails from people asking what I eat for lunch on Paleo and people saying they dont have time to eat Paleo.  Oddly enough these two things are related!   I make a organic mixed green salad every single night that is large enough for Pete and I to have some for dinner and lunch the next day!  Its really perfect because the salad takes no time at all and then you have a  healthy lunch ready to go everyday.  It even works as breakfast in a pinch.  Sounds weird but just eat it with some sausage and you are good to go!  I find being prepared and having a salad on hand at all times makes it easy and Im not tempted to reach for something unhealthy.   I am going to share my tricks to making as we call it the go to salad.

1. Buy pre-washed mixed greens and always keep a few extra on hand
2. Use the pre-cut veggies at the Whole Foods salad bar so you dont have to chop as much
3.  Buy the cherry tomatoes that you can toss in whole if you dont feel like chopping
4.  Add diced avocado to any salad.  I think it helps me feel satisfied and not miss cheese


These are the best you can rinse them in the cute containers because the have holes on the side to drain!
