Short Ribs for South Beach!!!

I'm headed to a good friends Bachelorette Party in South Beach tomorrow so I wanted to make Pete a fabulous meal before I depart.   These short ribs were a little work but well worth it!! 
You start by browning the ribs and then setting them to rest.   While the ribs are browning create a paste with 3 carrots, 3 stalks of celery, an onion, and 6 cloves of garlic.  I use the food processor to make it easy.  Brown the paste for 6 mins and then add a can of organic tomato paste and 3 cups of red wine.  This creates a great sauce!   Pop the short ribs in with thyme and bay leaves and bake on 375 for 2.5 hrs.  Enjoy!!!  I'll be enjoying fun in the sun until Sunday!!!
