Walleye Recipe

So this is a great topping that I use at least twice a week on a white fish or salmon.  It is so east and has lots of flavor.
1. Roast any kind of tomatoes you have on a cookie sheet with coconut oil, salt, and pepper for 30 mins at 400 degrees.
2. Chop fresh basil, red onion and garlic
3. Mix with the tomatoes and a splash of balsamic
4. Top any fish and enjoy!!!
Start by slicing the tomatoes and placing them on the cookie sheet

I served with an Arugula salad with carrots, apples, onion, and walnuts

cooking the fish in a little coconut oil
