Making chili is one of my favorite things. Not only is it delicious but its great for the paleo lifestyle. Reason I say this is you can make it in a large quantity. People are always asking what I eat for lunch if I cant have a sandwich. Well that is why I make double dinner so we have lunch the next day. The key to paleo for me is being prepared and always having decent options on hand so I'm not tempted to make poor choices. This is a new chili recipe I made last night with Ground Buffalo from the Mill City Farmers Market we bought on Saturday. For those in Minneapolis this farmers market is AMAZING!!!!! I will post all about my favorite vendors there later this week. Pete and I are Saturday regulars now and could not be happier with the meat and produce selection. Enough talk here is the recipe.... I think its perfect for this new fall weather!
1. Start by browning 2 pounds of Ground Bison
2. add 2 diced yellow onions, 2 poblano peppers
3. Grate in 3 cloves of garlic
4. add a diced red pepper and orange pepper
5. add 2 tablespoons cumin, chili powder, crushed red pepper
6. final add 4 tomatoes, 1 can organic tomato paste, 1 can jalapenos (reason I use canned instead if fresh is it somehow makes it spicier and sweeter... trust me)
7. Enjoy with some diced onion as a garnish and a wonderful mixed green salad
