Originally I was just making crab salad in little endive spears.... That was until Pete called me as I was pulling into Whole Foods and proclaimed his hatred for crab. WTF
After I got over my shock at someone not liking crab I improvised and made tuna salad as well. I'm glad I did because I really enjoyed both and they were so EASY!!! This recipe is perfect for lunches, dinner, and even a party bc the presentation in the endive spear looks super fancy. I garnished with a slice of avocado. Delish!! Sorry about the lack of recipes this week we have been eating leftovers and obsessing about the progress or actually lack there of at the new house. I have a few pictures to share. Hopefully someday soon we will actually live there.
Ingredients for either salad
- 2 cans lump crab meat or two cans of tuna
- 2 tablespoons paleo mayo. You should make your own technically.... I don't know how and Pete usually does it for me but wasn't around so I buy one at Whole Foods that's almost Paleo.
- 2 tablespoons lemon juice
- 2 tablespoons fresh parsley
- 1 red bell pepper
- 1 bunch green onion
- salt & pepper
- Belgian endive
- avocado for garnish
Start by putting your fish in a mixing bowl. Make sure you drain the excess water!!! Add the mayo, lemon juice, and s&p. Chop the veggies and mix in. Stir and spoon into endive. DONE
Could not be easier!
