Anchovy Obsession... Gwyneth Salad Dressing

One of the most annoying habits I have is eating in the grocery store while shopping..... I used to just hit up the bulk food section and start tossing back nuts etc until my new discovery of white anchovies.  These little guys are so tasty and delicious they have changed my life.  I was starving at Whole Foods and saw them prepackaged in a plastic container in the seafood case.  Same place they have the smoked salmon and shrimp cocktail.   I cant go shopping without eating them now and you wont want to either.   The addiction is more than just a shopping treat I have to bring them home so I can pop them whenever the craving strikes which is often.  Today for lunch I made a anchovy salad dressing adapted from Gwyneth's cookbook.   This dressing is so awesome you can just eat it on a plate of greens and it packs all the flavor and is super healthy!!   It takes about 3 minutes time and 4 ingredients everyone has on hand. You will be licking your salad fork I promise!!!!

I started to do some research on anchovies just to make sure they weren't high in mercury or something horrible that would crush my hopes and dreams and found out they are SUPER high in Omega 3s!   They are also very low in mercury making it a great source for us to get Omega 3s from.  They are also a great source of minerals Selenium and Magnesium which makes me beyond happy.   The icing on the cake is 5 anchovies have 9 grams of protein and only 50 calories making them the perfect snack!   But besides all those awesome facts they just taste great which makes you want to eat them.  So pop them on your next WF trip or make this dressing for dinner tonight!

Ingredients
5 white anchovies
2 tablespoons organic mustard (look for one without sulfates)
2 tablespoons apple cider vinegar
1/3 cup olive oil

Just blend them all in food processor or blender and ENJOY.
