Mind Blowing Cauliflower Mash!!!

I can barely type I'm so excited about this recipe for Cauliflower Mash!!   My Mother in Law sent me a recipe for a cauliflower mash last week and it inspired me to try to make my own.   I have always been skeptical that any veggie can taste like mashed potatoes but I have been proven wrong.  Pete said it was better than potatoes!!!!  You seriously cant believe how creamy it tastes.  We marveled at this dish all night in awe!   This is a side dish that will be a major staple for us now.   Besides being insanely delicious cauliflower has many health benefits.  I will admit I was unaware of until yesterday.   It contains a large amount of Vitamin C, folate, and Vitamin K.  Not to mention is VERY low calorie so you can eat a ton of it.  So start cooking and decrease your inflammation with this tasty treat!

I served the mash with bison jalapeno sliders that were out of this world!  I will share the recipe tomorrow.  The mash is so important it needed its own post.  We have leftover mash that I am going to reheat with steaks this evening.   You could really change this mash recipe by adding any herbs you desire or even a little prosciutto for crunch.  The possibilities are endless!!!

Ingredients

  1. head of cauliflower
  2. 2 cups chicken stock
  3. 4 sprigs of fresh rosemary
  4. 5 cloves of garlic 
Directions
  1. Cut the leaves of the cauliflower (they have a bitter taste you dont want)
  2. place in dutch oven with 5 cloves of smashed garlic, leaves of rosemary
  3. cover with chicken broth and bring to a boil for 15 mins (check it halfway through so it doesnt burn)
  4. remove the cauliflower and put into the vitamix or food processor and mash until creamy smooth!! 
  5. I made mine earlier in the day so I just put it into a baking dish and reheated before dinner

4 Simple Ingredients 

Cut off the green leaves 

Dont worry about chopping rosemary since it will go through food processor later

pour broth in 

after 15 mins with the lid on 

dump into Vitamix

Puree

  3. This has become my very favorite thing to make with my Vitamix! Thank you for an awesome recipe. The consistency and flavor was amazing. I didn't have fresh rosemary so I used dried rosemary (about 1 tablespoon) and it was perfect.

  4. At the end does the cauliflower go in the blender alone or do u dump all the ingredients in and blend?

    1. Drain the cauliflower, then put all the other ingredients in the blender with the drained cauliflower.

    2. Why do you need to drain the cauliflower if it's all going in the blender? This step needs clarification. Even the pictures show only the cauliflower going into the food processor and the instructions never mention adding the broth. So, yes you add the broth or no, just the cauliflower?
