Spaghetti Squash hits the spot!

I haven't made spaghetti squash in a while but when I saw it on sale at Lunds I grabbed one and went for it.   Pete usually isn't that into the spaghetti squash but it was a huge hit last night!  I think you really have to take the time to cook it properly so it isn't mushy or too crunchy.
The most annoying part of the whole cooking process is cutting the squash in half before baking.  Make sure you have a SHARP knife!! This recipe really hit the spot it is very seasonal and it was nice to have a night off meat.


1.  Preheat the oven to 375
2. Cut squash in half and season with olive oil, salt, and pepper
3. Bake for 60 mins
4. Scoop out the squash poop and throw out.  Take a fork at peel out the good stuff into a bowl
5. Mix with your fav pasta sauce (I'm still on the Monte Bene)
