I have to say I am obsessed with this and will 100% make it at least once a week but its pretty annoying to make. You have to de rib the kale and finely chop it and then shred the sprouts. I used a mini food processor for the sprouts or I might have gone insane. I made a huge batch and it holds up great. I have already had it for dinner last night and lunch today!
Ingredients
1. 4 cups kale chopped finely ( I used 2 bunches of dino kale from Whole Foods no idea if it was exactly 4 cups)
2. 4 cups shredded sprouts
3. 1/2 cup parmesan shredded
4. 1/2 cup sliced almonds
1/4 diced red onion
Dressing
1. 1 tablespoon minced red onion
2. 2 tablespoons dijon mustard
3. juice of 1 lemon
4. 2 teaspoons honey
5. 1/4 cup olive oil
I would recommend anyone to take a look at this. I feel it’s just a steal. It really is one of the best paleo recipe books we’ve come across!
