Lunch date & Dinner date

I wanted to bring lunch over to enjoy with my good friend that has a brand new baby.   So naturally I thought  Portillos chopped salad.... since that is not an option in Minneapolis yet I decided to make my own.  I even did the lemon poppy seed muffins just like they do.   As previously stated I HATE chopping so I figured I would make a two big portions and serve it to Pete for dinner.  It was quite perfect  I made both lunch and dinner at one and was done for the day with one clean up session!  I was even able to customize both salads to make one strict Paleo for Pete.
I had a great lunch with my friend and her PERFECT little angel and then a lovely dinner with Pedro.   Not a bad Thursday!

Ingredients

  • Romaine lettuce chopped
  • chopped chicken
  • chopped tomato 
  • chopped avocado 
  • chopped green onion
  • corn (omit for paleo version)
  • chopped bacon
  • little noodle rings (omit for paleo)
  • goat cheese crumbles (omit for paleo)

Ingredients 

2 salads 

Do yourself a favor and buy the already clean romaine 

chop the lettuce in tiny strips 

boil the noodles 


pumpkin cupcakes 

lemon poppy seed muffins 


cream cheese frosting  
layer the salads

finished product

Finished muffins

Store for service 

basket for travel 

Ready for a lunch date
